Is aged at the cellars at jasper hill, willoughby is a semi-soft, pasteurized, washed rind cow’s milk cheese. The texture of is silky, w/ occasional holes & a pale, caramel-colored paste. Flavors are meaty & rich, w/ notes of smoke & bacon.
