At our 2nd anniversary employee party we brewed a batch of beer. The style, steinbier, is pretty archaic. Super heated rocks, granite, were dropped into the boiling wort. The heat of the rocks flash caramelizes the sugars in the wort, coating the rocks and adding extreme depth to the finished beer. The rocks were saved and placed into the serving tank before the beer was racked. The caramelized sugars still coating the rocks slowly dissolved into the beer, adding a unique malt signature.
