The Phở Kin Ramen (PKR) concept came to fruition when the desire for a savory bowl of Phở and Ramen could not be satisfied locally. While growing up together, proprietors Khoa Huynh and Chef Mat Ewing became obsessed with recreating the standards of flavor combinations set by Khoa’s mother. Phở Kin Ramen will elevate the quality of Phở, Ramen, Asian street food and shared plates by marrying quality ingredients with the heavy influence of the bright, clean, and fresh flavors found in Vietnamese cuisine. Offerings such as Bao, Egg Rolls, Spring Rolls, Kimchi Fries, Crispy Tofu, Grilled Meats and Vegetables, House Made Ice Creams, and of course Phở and Ramen (in several forms) will be Phở Kin’s staples.
Khoa is a two-time Notre Dame graduate. After receiving his B.S. in May 2011, he went on to earn his M.S. from the Engineering, Science, Technology, and Entrepreneurship Program in August 2012. Upon completion of the program, he and six of his classmates, along with several prominent businessmen in South Bend, started a non-profit consulting organization called enFocus Inc. After two years with enFocus, Khoa went on to work for Matthews, LLC, a real estate development company. He then moved to Raleigh, North Carolina, where he worked in the financial service sector with Coleman Research Group. Khoa is currently the Research Programs Manager for the Harper Cancer Research Institute at the University of Notre Dame.
