Ganache is a French term referring to a smooth mixture of chocolate and cream. While many ganaches are made of chocolate, cream, butter, oil, and preservatives, Chocolate Fetish ganache is made only with chocolate couverture and heavy cream to which subtle flavorings are added for certain recipes. Ganache has many uses beyond chocolate truffles, such as filling and coating cakes and pastries.
